After rice, noodles are without a doubt the most important part of a Japanese diet and they’re found in abundance in Itoigawa!
Itoigawa has a long history of soba production, especially in the mountainous regions, where it was traditionally harder to cultivate rice. Today you can find a variety of soba noodle restaurants throughout the city. Many of these restaurants also offer treats like tempura and sasazushi (sushi wrapped in a bamboo leaf), which are traditional favorites that match perfectly with the delicate flavor of soba.

No trip to Itoigawa is complete without trying Itoigawa’s Black Yakisoba. This Itoigawa dish features stir-fried noodles in a jet black sauce made from locally sourced squid ink. Each restaurant has its own recipe and preparation style for this dish, so make sure to try it more than once!
